Last week I was browsing through my recipe pins on Pinterest and landed on www.closetcooking.com. I was originally going there to get the recipe for another sandwich when on the sidebar I noticed the Grilled Chicken and Club Sandwich with Avocado and Chipotle Caramelized Onions and it looked delicious!

Needless to say, that’s what I was making for dinner. It turned out to be a delicious sandwich and it will be on the menu rotation at our house.
Grilled Chicken Club Sandwich
Serving: Makes one sandwich
1 small chicken breast, pounded thin
Salt and pepper or your favorite grilled meat seasoning (I used McCormick Mesquite Seasoning)
1 tablespoon mayonnaise
2 leaves lettuce
2 slices tomato
2 slices bacon, cooked
1/2 small avocado, sliced
Chipotle caramelized onions (recipe below)
1 sandwich bun
Brush your grill with oil and heat it to medium heat. Season the chicken and grill until cooked, about 5-7 minutes per side. Assemble the sandwich and enjoy.
Chipotle Caramelized Onions
When I cooked the onions, I left the chipotle out. For a little kick, you can use the chipotle.
1 tablespoon olive oil
4 cups onion, sliced
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1/2 cup water
1 chipotle chili in adobo, chopped
Heat the oil in a pan over medium heat. Add the onions, chipotle chili, vinegar, sugar, and water. Cook, covered, until completely tender and caramelized and golden, about 40-50 minutes, adding more water as needed.
