Broccoli Cheese Soup

Who jumped up and down this morning because it was cold outside??? ME! I have on long sleeves, skinny jeans, and boots today and it feels soooo good! I hope this weather is here to stay, but I am sure warm days will come again soon.

Since fall weather has made an appearance today it was the perfect chance to make a pot of soup...just something about cold weather and pulling out the soup pot! One of my best friends shared this recipe with me for Broccoli Cheese Soup. We made it for a soup lunch we were working and it was the first soup to sell out. I'm sure there are other good recipes out there, but this one is yummy and EASY!

Broccoli Cheese Soup

4 chicken bouillon cubes
1 1/2 quarts water
2 1/2 cups diced potatoes
1 cup diced celery (optional)
1/2 cup diced onion
1 20 oz. frozen chopped broccoli
2 cans cream of chicken
1 lb. Velveeta, diced

Bring cubes, water, potatoes, celery, and onion to a boil. Turn down and cook for 20 minutes. Add broccoli and cook 10 minutes. Add soup and cheese. Turn to low and stir until cheese is melted.


By the way, I have a new niece :) Mia Margaret was born Monday morning at 8:19 AM. She was 8 lbs, 10 oz and is just adorable! She gets a post dedicated to herself soon!
