Chicken Georgia

When I see or hear about a Paula Deen recipe, I don't have a doubt in my mind that it will be yummy - anything with a stick of butter or more can't be bad!  I read about this dish on Tiffany's blog and it sounded easy enough for me on a quick meal night.  That night was last night and it was pretty good!


Chicken Georgia

4 tablespoons (1/2 stick) butter
4 skinless boneless chicken breast halves
1 cup sliced fresh mushrooms
2 tablespoons minced shallots
1/4 teaspoon salt
1/4 teaspoon pepper
4 ounce grated mozerella cheese

Melt butter over medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Remove vegetables with slotted spoon. Add chicken to pan and cook 10 minutes on each side, or until tender. Transfer chicken to platter and sprinkle with grated cheese. Top with mushroom mixture. Let stand 5 minutes before serving or just until the cheese has melted.

**I'm not sure our small town grocery store even knows what shallots are!  I used onions instead.
**I have to admit that I read the recipe wrong on my phone as I glanced down and used more than 1/2 stick of butter!  No wonder it was so good ;)
**The recipe doesn't call for seasoning the chicken, but I was a seasoning queen while it was cooking.  The tastier the better!

I always add more butter and mushrooms... and a lot of seasoning! Yummy!!
