30 minute chicken - in the microwave!

Like I don't have enough to do - teaching, photography, the shop, and life - I decided to add something else to my list!  You are looking at the newest....

I am excited about becoming a Pampered Chef consultant!  There are a few perks such as tons of new kitchen products and recipes, but I also get to travel around and cook while showing off some really neat kitchen products - it's a pretty fun job!  I was slightly worried when I became a consultant because you must have $1250 in guest sales in your first 3 months or you have to pay that amount back -  yikes!  Well, that worry has faded because my first party did over $1250 in guest sales!

Throughout my Pampered Chef journey I will share with you some of my favorite products and recipes.  Lucky you!  If anyone is ever interested in hosting a Pampered Chef cooking show party or catalog party, please let me know!  Pampered Chef is now available as a fundraiser so keep me in mind when your business or organization is looking to do a fundraiser.  If you are the host, you get lots of free product which is a huge perk for you! 

Speaking of recipes, this one might be too good to be true, but I cooked it last night and yes, you are reading right - a whole chicken cooked in the microwave in 30 minutes!  You may want a Deep Covered Baker after you read this recipe! You can eat the chicken as is or use the chicken for tacos, enchiladas, salad - the options are endless :)

30 Minute Chicken
Our Deep Covered Baker and a flavorful seasoning mixture make this chicken easy and irresistable. Unglazed on the inside for perfect baking, glazed on the outside for perfect presentation.  A member of the Pampered Chef Stoneware collection.

1 whole chicken (3 1/2-4 lb)
1 tbsp olive oil

Seasoning Mixture
1 tbsp all purpose flour
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp coarsely ground black pepper
1/4 tsp dried thyme leaves

For chicken, lightly spray Deep Covered Baker with oil.  Remove and discard giblets and neck from chicken cavity. Rinse chicken with cold water; pat dry with paper towels.  Trim excess fat if necessary.  Tie ends of legs with cotton string.  Lift wings up towards neck, then tuck under back of chicken. Place chicken on cutting board; brush with oil.

For seasoning mixture, combine ingredients in prep bowl.  Mix well.  Completely coat outside of chicken with seasoning mixture.  Place chicken, breast side up, in baker.

Microwave, uncovered, on high for 25-30 minutes or until thermometer registers at 165 degrees in thickest part of breast and juices run clear.  Remove from microwave.  Cover with lid and let rest 10 minutes.

And to think, three years ago you couldn't boil water and now you are demonstrating cooking! Amazing! I am proud of you.

I'm really anxious to try the dry mix on some chicken breasts and experiment with the baking time. Looks so good, Whitney, and congrats on your new venture.
